Students have endless beverages options on campus, but there’s one they prefer most: specialty coffee. While choices such as milk, chocolate milk, juice and soft drinks are still among the top beverages students order, the No. 1 non-alcoholic beverage at the nation’s 50 leading universities is specialty coffee. Following in the footsteps of commercial restaurants and coffee chains, universities across the country are brewing up upscale java of all kinds in their dining halls and on-campus cafes. They’re brewing complex roasts and flavored coffees and espresso drinks, such as lattes, cappuccinos and macchiatos. Not to be outdone by their coffee chain competitors, some are also offering iced coffee and iced espresso drinks. To make sure students can have their coffee their way, many universities are providing coffee fixen bars with a variety of add-ins, including various types of milks and milk substitutes, natural sugar and sugar substitutes, as well as condiments such as cinnamon, nutmeg, whipped cream, flavored syrups, caramel and chocolate sauce.With students more aware than ever of where their food comes from, a select few universities have even upgraded to Fair Trade coffee beans. Given the habitual nature of a cup of Joe, offering a variety of high-quality specialty coffee is a good way to lure students day after day.
