Peanut Butter Marinade

Peanut Butter Marinade

YIELD: 1 QT. MARINADE

1½ cups pourable peanut butter
1½ cups soy sauce
½ cup honey
3 Tbsps. lemon juice
1½ tsps. ground ginger
1 Tbsp. minced garlic
½ tsp. red-pepper flakes

Boneless chicken breast, pork or assorted vegetables

1. Stir together peanut butter, soy sauce, honey and lemon juice. Add ginger, garlic and red-pepper flakes. Pour marinade evenly over meat or vegetables. Cover and refrigerate for 6 to 8 hours, turning meat once.

2. Wipe excess marinade from meat and discard marinade. Bake or grill until tender.
