Tri-Color Pepper & Canadian Bacon Breakfast Pizza

YIELD: 1 SERVING

1 - 8" round flatbread, pita bread or naan bread

1 tsp olive oil

1 oz. mixture of red, yellow and green bell peppers, diced

1 oz. zucchini, diced

4 oz. prepared Canadian bacon crumbles

3 large eggs, scrambled (or 6 oz. liquid eggs

Fresh oregano leaves for garnish

  1. Brush flat bread evenly with olive oil on both sides. Place bread on a flat top grill or in the oven until lightly toasted.

  2. Sauté bell peppers and zucchini in a skillet until tender. Add Canadian bacon crumbles and continue cooking until crumbles are heated through.

  3. Cook eggs in an 8" non-stick pan to form an omele1t.

  4. Assemble pizza by placing the omelet on top of the flat bread. Spread Canadian bacon crumbles and vegetable mixture evenly over the omelet. Garnish with fresh oregano leaves.
