In August, Colorado’s Castle Rock Adventist Hospital plans to roll out Manna, a multi-platform hospital foodservice concept that takes advantage of trends like seasonal ingredients and local sourcing. The concept features three components: Manna, a full-service restaurant; Manna Market, a c-store; and Bedside Manna, a room service style patient dining program.
Manna restaurant will feature a modern dining room, waitstaff service and seasonal outdoor spots with a changing menu and open kitchen where diners can watch their meals being prepared to order by the chefs. It will cycle around Colorado’s growing season and highlight ingredients that represent the best of what local farms harvest and local vendors offer. Manna Market will sell coffees and grab-and-go meals along with retail items.
The Manna operation will be overseen by Chef de Cuisine and Johnson & Wales graduate Adam Freisem. Castle Rock Adventist’s overall dining operations are headed by Nutrition Manager/Executive Chef Daniel Skay, a CIA-Hyde Park graduate with more than 30 years experience in the commercial and non-commercial foodservice industries.
The hospital is also opening a community garden with 90 raised beds that will be available for rent, along with another large garden that will supply Manna with fresh herbs and vegetables.
