U-MD to Launch Meatless Mondays

The University of Maryland is starting Meatless Mondays in the spring semester at its The Diner and South Campus Dining Hall locations, reports the Diamondback campus paper. Despite the name, the venues will still menu items containing meat, including the highly popular burgers and chicken tenders. However, the emphasis will be on vegetarian dishes. Maryland Dining Services worked with representatives of the Student Government Association on the program, which will include new meatless choices developed by Senior Executive Chef John Gray.
