Paul Quinn College has done what may seem sacrilegious in the state of Texas, reports the Associated Press. It converted its football field into an organic urban farm that supplies the school's cafeteria as well as several outside customers—including the Dallas Cowboys.
The school, a historically black college in Dallas with a 200 student enrollment, is partnering with Yale University's Sustainable Food Project on the two-acre plot. Paul Quinn gave up its football program several years ago, leaving the field largely unused space.
