Oklahoma State University Dining Services Director Terry Baker and Assistant Foodservices Manager Veddu Hsu have won the grand prize in the school’s inaugural Creativity Challenge for their work in bringing more local food to campus. The honor comes with a $5,000 prize.
The pair’s proposal is designed to support the local economy while educating students on sustainability and the university’s social commitment to the state. It outlines a plan for implementing local food distribution, instituting menu planning based around seasonal foods, bringing a farmer’s market to campus and inaugurating an education program about farmers markets and their impact on the local economy. The contest drew 180 proposals.
