Grilled Kiwi and Prawn Skewers
YIELD: 4 SERVINGS
8 fresh prawns, size
2 fresh kiwifruit
½ tps. cumin
splash hot sauce
2 Tbsps. olive oil
Salt and pepper, to taste
1 lemon, juice and zest
1. Peel and clean prawns. Peel kiwi; cut crosswise into quarters. In a bowl, mix together the remaining ingredients for a marinade.
2. Toss kiwis and prawns in marinade. Grill kiwi and prawns separately over medium heat. Grill prawns until just cooked through. Grill kiwi lightly so it holds its shape.
3.Remove from grill and skewer one prawn and one kiwi on a 4" appetizer skewer. Serve warm.
Additional option: Serve with a creamy aioli over a bed of mixed greens for a main course salad.
