To eat on- or off-campus? That is a key question facing today’s college students. But while they have more dining options than ever before, an increasing number of students are choosing to purchase food and beverage from on-campus foodservice outlets. Whether it’s a main meal, a mid-day beverage boost or a late-night snack, today’s students place variety at the top of their menu-must-have lists—and many progressive colleges and universities are giving it to them. Educational foodservice operators across the country are keeping students eating on-campus by expanding menu offerings and adding new locations to meet students demand for increased variety. Some are adding ethnic fare, such as Thai, Mexican and Indian, or adding options to address dietary needs, such as vegetarian, flexitarian and gluten-free. Others are using local and sustainable ingredients, including produce sourced from local farmers and sustainably sourced seafood, or offering more customizable meals, such as made-to-order pasta and make-your-own pizza. Adding a few more options is a surefire way to get more students to choose your campus eateries more often. What else will you offer?
