Fixed menus? Pre-prepared meals? No way. When it comes to eating on campus, today’s college students demand more choices than ever—and they want to be the ones making them. Recent research reveals that nearly 40 percent of students say their top menu attribute is the ability to customize. More and more colleges and universities are meeting that demand by offering customizable meals. Some operators are taking a cue from the success of fast casual restaurants, allowing students to build-their-own burrito, sandwich or burger, choosing every element from carrier to condiment. Others have installed “action stations” where real chefs prepare special request pastas, pizzas, stir fries and omelets right in front of students. Still others are expanding the options on the classic salad bar, adding sizzle sections with hot grilled chicken, steak and tofu, and gluten-free and vegan items as well. Allowing more opportunities to customize means meals can be different every time—giving students endless possibilities and more reasons to return again and again.
