Trusthouse has had a very busy year. It integrated the acquisition of A’viands that it had made last year just prior to the publication of the 2011 Top 50 (where A’viands ranked #17) and has made two more acquisitions since. In April, it purchased Lindley Foodservice, a regaional contractor in the Northeast with around $20 million in annual revenues from a portfolio of healthcare and education accounts. In June it completed a merger with Valley Services (#15 below) that will nearly double its annual volume and establish it in the senior nutrition market.

Trusthouse itself was formed through the 2008 acquisitions of three formerly independent foodservice management companies and is headed by former Compass Group CEO Michael Bailey. The past year also saw the addition of Rob Dorfman as company COO and the appointments of Tom Cusimano and Mark Fortino as presidents of the Aladdin and Fitz Vogt units, respectively.

The firm concentrates on the institutional market, believing that segments like healthcare, education and corrections provide more stability than market-dependent ones like B&I and recreation. Operationally, Trusthouse continued its initiatives in organics, local produce, sustainability and composting. Ethnic concepts like Indian and Mexican are increasing their share of the business, particularly in college accounts, while comfort foods continue to be the focus in the long-term-care market.
