Leading Management Companies Ranked by Revenue

If you’ve noticed anything different about this year’s Top 50, don’t worry. It is different. For one thing, we’ve moved it to March from September to reflect more timely fiscal year-end figures. One thing that hasn’t changed is the comprehensive information about the largest players in onsite contract foodservice.

(Among other changes, online viewers can now view an interactive data table that lets you sort and resort our listings).

As always, the Top 50 is limited to firms with significant manual foodservice volume (though they may also offer other services such as vending, facility management, catering, etc.). Finally, our usual caveat: the listing should not be taken as a strict “ranking” since raw revenue does not necessarily reflect relative market position in a particular segment or operating region. Also, because contract terms (e.g., fee vs. P&L) sometimes obscure the scope of the actual volume a company manages, simple revenue numbers can be misleading.

Arriving at the numbers

The number that determines each company’s place in the Top 50 is its domestic top-line revenues for fiscal or calendar year 2012 (in millions of dollars). Where numbers are not available, FM estimates are based on known accounts and other information (indicated by an “e”).

Where the Numbers Come From...

The number that determines each company’s place in the Top 50 is its domestic top-line revenues for the most recently completed fiscal year (in millions of dollars). Because most companies operate on calendar years, they show a 2011 figure. In the few cases where 2012 fiscal numbers are available, we’ve used that figure. Next year, FM will move the Top 50 to March when most 2012 numbers will be available, and this data will be updated. Where numbers are not available, FM estimates are based on known accounts and other information.

FM’s annual profiles of the 50 largest U.S. foodservice management companies is limited to those that operate significant manual foodservice operations (e.g., specialists primarily in catering or vending are not included).

The 2012 Top 50 has five new companies, including a prominent new force in the sports concessions segment: Legends Hospitality Services, formed only four years ago and now with sufficient volume to make it #13 on our list. Another prominent addition is Southwest Foodservice Excellence (#24), which joins two other newcomers, Opaa Food Mgt. (#34) and Revolution Foods (#39) in illustrating a new emphasis on the K-12 segment by the contract community.

While the broad economy continues to sputter, the Top 50 grew by over $2 billion, led by #1 Compass Group, which accounted for about half that total by itself. Other big gainers included #2 Aramark (up $414 million), #4 Delaware North (up $300 million) and #9 Trusthouse Services Group (up $116 million). The latter is expected to double that total next year once it absorbs its recent acquisition, #15 Valley Services (and its nearly $200 million volume).

FM’s Top 50 is limited to firms that operate significant manual foodservice operations, so companies that are, for example, exclusively vending specialists or caterers are not included. Onsite foodservice is a remarkably varied industry encompassing operations in a wide variety of environments, so one should review the business summaries for each company to get a more accurate picture of its market activity rather than simply drawing conclusions based simply on its position on the Top 50. Revenue rank doesn’t always tell the whole story because contract terms may obscure the scope of what is being managed.

Where the Numbers Come From...

The number that determines each company’s place in the Top 50 is its domestic top-line revenues for the most recently completed fiscal year (indicated in each entry in millions of dollars). Because most companies in the Top 50 operate on calendar years, they show a 2009 figure. In the few cases where a company completed and compiled 2010 fiscal numbers, we’ve used that figure. Where revenue or other numbers were not available, FM estimates are based on known accounts and other information.

A unprecedented 15 companies in the Top 50 — including four of the top seven — reported revenue drops in their most recently completed fiscal years, starkly highlighting the difficult period the entire industry has experienced. On the other hand, there were also a number of companies that posted impressive gains, indicating that growth niches can be found in even the most challenging times.

The toll this has taken is reflected in the largest as well as regional contract operations. Even market-leading Compass Group North America reported only a marginal sales increase for FY 2009 while #2 Aramark experienced a $530 million decline. (The fiscal years reported here in most cases reflect a period that includes the deepest part of the U.S recession.)

Because of this and other quirks in the contract services market, caution should be exercised before drawing larger conclusions about a company's market position simply from its nominal standing on the list.

Onsite foodservice is a remarkably varied industry encompassing operations in a wide variety of environments, from school lunchrooms to football stadium skyboxes. Given this diversity, one should review the business summaries for each company to get a more accurate picture of its market activity.

Another complicating factor: contract terms that affect the revenue a contractor derives from a particular operation may obscure the scope of what is being managed. For instance, a contractor may get more top-line revenue from a modest-sized P&L operation than from a straight fee arrangement that actually feeds many more customers.

In the Top 50, we use the gross revenue number that reflects the dollars companies put on their top line rather than a managed volume number because, in the end, a company's size is most accurately indicated by its gross revenues.

Where revenue or other numbers were not available, FM estimates are based on known accounts and other information.

Almost half of the 2011 Top 50 (23 companies) exceeded $100 million in revenues over the past year (FY 2010), the second most ever. There were 24 in 2009, of which three (Boston Culinary Group, Lackmann Culinary Services, Next Generation Vending) have been acquired in the interim. Last year, there were 20. Joining the nine-figure club for the first time this year are Metz Culinary Management (#18) and Unidine Corp. (#20).

While the past year has been difficult for the economy as a whole, it is instructive to note that revenues for the Top 50 as a whole grew by almost $1.5 billion, or 4.6%, led by the Big Three of Compass, Aramark and Sodexo. But even the other 47 still added a net of around $165 million (2.4%) with only a half dozen posting actual revenue declines for the year.

This illustrates the ability of Top 50 companies to manage operations and fiscals in even a difficult financial environment, as well as the way contractors manage their “portfolios,” balancing stable but slow-growth institutional segments with more volatile commercial ones like B&I and Recreation. It should be noted, though, that even contractors heavily in B&I have managed for the most part to hold their own while those concentrating on schools, colleges, healthcare and other institutional segments have generally done even better.
