YIELD: 1 tacos

1 ¾ oz. prepared pico de gallo
1 ½ oz. red onion, sliced
¼ oz. cilantro, chopped
4 oz. coleslaw mix
2 ¼ oz. corn, roasted red pepper and onion mixture
2 oz. chipotle mayo
¼ cup all-purpose flour
salt and pepper, to taste
1.5 oz. skate filet
1 corn tortilla

1. To make the slaw: combine pico de gallo, red onion, cilantro, coleslaw mix, corn mixture and mayo. Set aside.
2. Season flour with salt and pepper. Dredge the skate wing in the flour; remove excess flour. Cook skate on flat top.
3. Place corn tortilla on the griddle to warm. Place one tortilla on a plate and top with the skate wing, then top that with ¼ oz. of slaw and serve.
