6 c. cooked whole grain brown rice 1 1/2 c. chopped cucumber 1 1/2 c. chopped tomato 1 c. chopped fresh parsley 1/2 c. chopped fresh mint leaves 1/2 c. sliced green onions 1/2 c. olive oil 1/2 c. lemon juice 1 tsp. salt 1/2 tsp. freshly ground black pepper
1. Combine all ingredients in large bowl. Toss well and chill. 2. Serve with pita bread or on a bed of chopped lettuce.
