FPI Southwest Style Cod fillets
Flame roasted corn & black bean fiesta
Red onion
Cremini Mushrooms
Red bell pepper
Green bell pepper
Bamboo skewers

Jicama Slaw
Large Jicama, peeled and julienned
Cucumber, peeled and julienned
Limes, juiced
Canola oil
Rice wine vinegar
Mandarin orange segments
Salt & pepper to taste


Method

Jicama Slaw
Combine all ingredients in mixing bowl and allow to marinate in refrigerator for at least one hour.

Kabobs
Cut vegetables into chunks and skewer with Southwest Cod fillets. Cook on grill or in 400 degree oven until cod is fully cooked.
