Open Faced Ice Shrimp Sandwich

Ingredients & Directions


24 slices
1 (10 lb.) bag
1/4 cup
2 tbsp.
1 cup
24
1 tsp.
1 tsp.
1 1/2 cups

Bread, buttered*
FPI Ice Shrimp
Finely sliced green onion
Lemon juice
Finely diced celery
Tomato slices
Pepper
Dried tarragon
Mayonnaise
Sliced dill pickles
Lettuce

*Fancy buns buttered and toasted can replace buttered bread.

Method
Mix together shrimp, onion, celery, pepper, tarragon, mayonnaise, and lemon juice. For each sandwich: cover bun or bread with lettuce and 1/4- 1/3 cup of shrimp filling. Place tomato slices and pickles on the side and serve with chips or salad.

Option
Use filling to fill prepared crepes; top with cheese sauce or tomato sauce and grated cheese. Heat to warm only. Brown under the broiler.
