YIELD: 4-6 SERVINGS2 medium onions
1. Peel and trim onions. Cut crosswise into ½” thick rings. Combine apricot jam, soy sauce and lime juice to make a glaze.
2. Grill onion slices and pork tenderloin over medium heat. When pork and onion have been on the grill for 10 minutes, brush them with glaze and turn as needed for even cooking. Cook pork until internal temperature reaches 160°F.
3. Transfer grilled onions to a bowl, separating into rings. Add fruit and cilantro. Slice pork. Serve with onion and fruit mixture. Squeeze lime juice over all.Alternate Oven Method:
