Swedish Covenant Hospital in Chicago has initiated a program of using organic ingredients in its patient meals. As part of the program, all stewed and ground beef used in patent meals (including for the hospital's traditional Swedish meatballs) comes from pure grass-fed beef sourced from the Tall Grass Beef Co. while many of the fruits and vegetables are organically grown. "We'll soon be able to offer some meals that are completely organic," claims Maria Simmons, manager of patient food service and chair of the hospital's Nutrition Action Committee. She added that the organic program is a natural extension of Swedish Covenant's cultural foods menu, which offers authentic ethnic Korean, Hispanic and, soon, Indian halal, dishes made from scratch in the facility's kitchen.
