Swedish Covenant Hospital in Chicago has initiated a program of using organic ingredients in its patient meals. As part of the program, all stewed and ground beef used in patent meals (including for the hospital's traditional Swedish meatballs) comes from pure grass-fed beef sourced from the Tall Grass Beef Co. while many of the fruits and vegetables are organically grown.
