YIELD: 4 servings

1 cup chicken or vegetable broth
¼ cup unsweetened coconut milk
1 ½ cups canned pumpkin
½ cup sliced onions, sautéed
1 ½ garlic cloves, roasted
1 ½ Tbsps. brown sugar
½ tsp. paprika
¼ tsp. cayenne pepper (optional)
½ tsp. freshly ground nutmeg
salt and freshly ground black pepper, to taste

1. Place all ingredients in a blender or food processor in the order listed and close the lid. Turn machine on and slowly increase speed to medium and then high.
2. Blend for 6 to 7 minutes (if using a blender with heat, steam will escape from the vent). If not using heated blender, move to a saucepan on the stove and heat up to a simmer. Garnish with pumpkin seeds.
