Elementary school students in the New Jersey towns of Hillsborough and Wayne Township recently were introduced to a new addition to their lunch menu rotation, sushi, reports the Star Ledger. Students in the two districts, both served by Sodexo School Services, got to sample spicy shrimp rolls and California rolls (with crab and seaweed included).
The sushi, which will only be served once every couple months because of its labor- and time-intensive preparation requirements—they were prepared by Sodexo staffers in the school kitchens—was a hit with the children on its first day. School officials say the reason for the somewhat unusual menu choice was the need to keep up with the expanding and diversifying palates of even very young children, combined with a need to find more menu items that meet stricter nutrition requirements governing school meals.
