A 1.25-acre garden at the Lincoln (NE) Community Correctional Center helps feed the medium/maximum-security facility’s 400 inmates, reports the Lincoln Journal Star. Last year, the garden produced some 3,000 lbs. of fresh produce, saving the state about $7,000 in food costs. The haul is expected to be even more this year and could save $12,000.
The kitchen uses the tomatoes, cucumbers, peppers, melons, cantaloupes, squash, zucchini, onions and radishes from the garden within days of harvest (storage space is at a minimum) as ingredients in salads, pizzas and prepared entrees like stews. The garden, one of eight prison gardens in Nebraska, is tended by two carefully selected inmates.
