YIELD: 4 servings
| 6 | extra-large eggs |
| 2 Tbsps. | whole milk |
| ¼ tsp. | salt |
| ¼ tsp. | pepper |
| 2 Tbsps. | butter |
| 8 | (½ in. each) slices sourdough bread |
| 8 | sausage patties, cooked |
| 8 | slices white cheddar cheese |
| Nonstick cooking spray | |

In a large bowl beat eggs with milk, salt and pepper.

Heat a nonstick skillet with butter. Add the eggs and scramble until firm throughout. Divide evenly into 4 servings.

Assemble 4 slices of bread as follows: bread, 1 slice of cheddar, 2 sausage patties and scrambled eggs. Top each sandwich with a slice of cheddar and a remaining slice of bread.

Spray a preheated panini grill or grill pan with nonstick spray. Grill sandwiches until the bread is toasted and the cheese melts. (If using a grill pan, weigh the sandwich down with a bacon press or cast-iron skillet.) Serve hot.
