Peppered Goat Cheese Coins
INGREDIENTS:6 sweet peppers (combination of red, yellow,
orange, black, green)
6 sprigs thyme
3 sprigs rosemary
6 cloves garlic
8 hot chili peppers
to taste, salt and pepper
1 lb. mild goat cheese, softened
as needed, mixed peppercorns DIRECTIONS:Stem, seed and chop
the sweet peppers in small pieces. Remove and finely chop leaves
from thyme and rosemary. Chop garlic in fine dice. Wearing rubber
gloves, stem and seed the chili peppers.
Place softened goat cheese in a bowl. Add the chopped ingredients.
Mix everything together until smooth. Shape the goat cheese mixture
into ovals. Crush the colored peppercorns in a mortar and pestle.
Spread on a cookie sheet with sides, or a bowl. Roll the goat
cheese cheese ovals in the crushed peppercorns. Arrange the ovals
on a platter. Serve with crackers and very cold beer.
