Rodeo Chicken Toss

INGREDIENTS:Ancho BBQ Sauce:
3 cups honey barbecue sauce, commercially prepared
2 Tbsp. ancho chile pepper, ground

Green Chile Ranch Dressing:
2 ¼ cups ranch dressing, commercially prepared
3/4 cup green chile salsa, commercially prepared
3 lbs. Tyson® Ready-to-Cook Homestyle Pepper Popcorn Chicken Bites®, frozen (#8350)
12 Mexican Original® Tomato Flavor Tortilla Wraps, frozen (#7825), deep-fried into bowl-shaped containers (optional)
36 cups mixed salad greens, fresh, commercially prepared
3 cups tomatoes, fresh, diced
as needed for garnish, onion straws
as needed for garnish, cotija cheese DIRECTIONS:Combine ancho BBQ sauce ingredients in saucepan and whisk to blend. Simmer over low heat for 2 to 3 minutes, stirring frequently. Remove from heat. Keep warm.

Combine ranch dressing and chile salsa in bowl and whisk to blend. Cover and chill to hold.

Deep-fry Popcorn Chicken Bites® at 350°F for 3-3½ minutes, or until chicken is no longer pink. Remove from fryer and drain. Keep warm above 140°F.

To assemble single serving, portion 3 cups lettuce blend in tortilla bowl. Top with ¼ cup tomatoes. Combine 1 cup chicken and ¼ cup barbecue sauce in bowl; toss to coat. Portion over salad blend. Garnish salad with 1 cup onion straws. Sprinkle 1 Tbsp. cotija cheese over onion straws. Accompany with ¼ cup dressing portioned in ramekin.
