Italian Roasted Russets
INGREDIENTS:40 oz. Herb Roasted Russet Wedges
4 fl.oz. olive oil
1 tsp. paprika
3/4 oz. Parmesan cheese, dry grated
½ tsp. salt
Garnish:
2 Tbsp. chopped chives
1 oz. Parmesan cheese DIRECTIONS:Place Herb Roasted Russet
Wedges in a stainless mixing bowl and toss with oil. Blend dry
ingredients together and toss with potatoes and oil until well
dispersed. Place potato blend on half sheet pan lined with foil and
sprayed with pan release. Place potatoes in oven at 375°F and
roast for 14 minutes until internal temperature has reached
185°F. Remove from oven and place in holding pan for service.
Garnish with chopped chives and Parmesan cheese. SERVINGS:8
