Almond Curry Couscous
INGREDIENTS:1 cup onion, minced
½ cup celery, small dice
½ cup carrots, small dice
¼ cup garlic, minced
½ cup olive oil
6 Tbsp. curry powder
3 qts. broth (chicken or vegetable)
3 lbs. couscous
3 cups Blue Diamond® Sliced
Natural Almonds, toasted
1 ½ cups golden raisins
for garnish, Blue Diamond® Sliced Natural Almonds, toasted
DIRECTIONS:In large sauce pot, saute onions, celery, carrots
and garlic in hot oil until tender. Add curry powder and cook 2
minutes more. Add broth and heat to boiling. Stir in couscous and
raisins. Remove from heat. Cover and let stand 5 minutes. Add 3
cups almonds, and fluff couscous with a fork. Adjust seasonings
with salt and pepper before serving. Garnish with additional
