Almond-crusted New Zealand Hoki with Honey Lemon Butter
INGREDIENTS:Butter
20 oz. honey
30 oz. butter or margarine
3 Tbsps. grated lemon zest
Sliced almonds as needed for garnish
Fish
48 6 oz. portions Hoki fillets, thawed
3 lbs. almonds, chopped
2 lbs. butter, melted, cooledDIRECTIONS:1. For
Butter: Blend honey, butter and zest together until smooth.
Portion into 1 oz. containers, garnish with two slices of almonds,
cover and chill until service.
2. For Fish: Preheat oven to 375°F. Rinse fillets under
cold water. Pat dry. Dip fillets in melted butter then in chopped
almonds. Place fillets on greased baking sheets and bake
approximately 10 minutes or until fish just flakes with a fork.
Serve fish hot with honey lemon butter.
