Eggs Benedict a la Duckling
INGREDIENTS:12 English muffins, cut in half,
toasted
12 oz. smoked duckling breast, heated, ¼-inch slices
12 poached eggs
12 oz. prepared Hollandaise sauce
12 stemmed maraschino cherries (optional, for
garnish)DIRECTIONS:Assemble Eggs Benedict, and garnish with
maraschino cherry. Serving size: 2 oz. smoked duckling breast and 2
