Turkey, Walnut and Grape Salad on Focaccia

INGREDIENTS:Dressing:
¼ cup mayonnaise
3 Tbsp. fresh lime juice
2 Tbsp. chopped fresh cilantro
1 clove garlic, minced
¼ tsp. ground cumin
¼ tsp. salt

Turkey Salad:
2 cups roughly chopped turkey
1 cup halved California seedless grapes
3/4 cup chopped walnuts
¼ cup choppd and drained canned roasted red peppers or pimientos
¼ cup finely chopped scallions

Sandwich:
6 pieces focaccia or soft sandwich rolls
as needed, lettuce leavesDIRECTIONS:To make dressing:
Combine all dressing ingredients. For salad, combine turkey, grapes, walnuts, red peppers and scallions with half the dressing. To make sandwiches, slice focaccia or rolls in half.
