Turkey, Walnut and Grape Salad on Focaccia
INGREDIENTS:Dressing:
¼ cup mayonnaise
3 Tbsp. fresh lime juice
2 Tbsp. chopped fresh cilantro
1 clove garlic, minced
¼ tsp. ground cumin
¼ tsp. salt
Turkey Salad:
2 cups roughly chopped turkey
1 cup halved California seedless grapes
3/4 cup chopped walnuts
¼ cup choppd and drained canned roasted red peppers or
pimientos
¼ cup finely chopped scallions
Sandwich:
6 pieces focaccia or soft sandwich rolls
as needed, lettuce leavesDIRECTIONS:To make
dressing:
Combine all dressing ingredients. For salad, combine turkey,
grapes, walnuts, red peppers and scallions with half the dressing.
To make sandwiches, slice focaccia or rolls in half. Assemble each
sandwich with lettuce leaves and 2/3 cup turkey salad, Serve
remaining dressing as a condiment.SERVINGS:6
