Top O The Morning Hash

INGREDIENTS:48 oz. Simplot Roasted O’Briens, thawed
12 oz. cooked turkey, shredded
1 Tbsp. fresh rosemary, chopped
2 tsp. salt
2 tsp. black pepper
2 fl. oz. vegetable oil
10 fl. oz. Hollandaise sauce, prepared
1 tsp. Cajun seasoning
20 eggs
2 ½ oz. green onion, sliced DIRECTIONS:Combine first five ingredients in a bowl. Place oil on 350°F grill and spread thin. Place potato mixture on grill for 4 minutes per side until brown and internal temperature reaches 165°F.

Mix prepared Hollandaise sauce with Cajun seasoning. For each order of hash, poach 2 eggs. Place 6 oz. hash on plate, top with prepared eggs, and 1 fl. oz. Hollandaise sauce. Garnish with green onions. SERVINGS:10 servings From: PHOTO CREDIT:Photo Credit: SIMPLOT
