In an impressive public relations move that highlights its commitment to local purchasing and sustainability, Hudson (WI) Hospital & Clinics purchased a hog from a local 4-H at the recent St. Croix County Fare and plans to serve the cuts it derives from it in the coming weeks to both patients and staff, reports the Hudson Star & Observer. The hospital also selected a local firm, Olson's Meats, to process the animal into various pork products, including smoking for bacon and ham.
