ServSafeEssentials/ Coursebook, Third Edition

National Restaurant Association Educational Foundation, Chicago, 2004

With a new look and format, ServSafe's Third Edition Essentials and Coursebook publications offer significantly new and restructured content, as well as new science-based and industry best practices.

ServSafe was developed to provide the foodservice industry a standard for food safety training and certification and is accepted by more federal, state and local jurisdictions than any other such program, according to the National Restaurant Association.

The Third Edition includes a variety of changes from previous editions, including updates from the recently released 2003 supplement to the 2001 FDA Food Code. It also has new sections on food security, crisis management and active managerial control, and there are brand new multiple-choice study questions to match the content as well as new photos, graphics and icons that help bring the food safety training to life for users.

NRAEF has apparently worked very hard in updating this highly popular program to make it easier to understand and more comprehensive. Updated case studies provide useful real-world applications of the lessons, for example.
