Buttermilk Blue Cheese Dressing

YIELD: 6 CUPS (DRESSES 12 SALADS)

2 cups sour cream
1 cup mayonnaise
2 cups Buttermilk Bluecheese, crumbled and separated into 1 cup portions
½ cup vinegar
salt and pepper, to taste
¼ cup scallions, chopped

1. Combine sour cream, mayonnaise, 1 cup Buttermilk Blue cheese, vinegar, salt and pepper in a bowl and mix thoroughly. Gently stir in second 1 cup portion of Buttermilk Blue.

2. Lastly, add scallions and refrigerate. Serve dressing on romaine or iceberg lettuce (or your favorite salad greens).

Green Goddess dressing was created by the chef at San Francisco's Palace Hotel during the 1920s in honor of actor George Arliss, who was appearing in a play called ‘Green Goddess.’ This classic dressing is a blend of mayonnaise, minced anchovies, chives, tarragon, parsley, scallions and garlic.
