Baked Fish Taco
YIELD: 1 serving
1 (6-inch) whole-grain tortilla
1 tsp. taco seasoning
½ tsp. seasoned salt
¼ cup raw shredded cabbage
1 tsp. chopped raw onion
2 tsps. chopped cilantro
1 white fish patty, frozen, unbreaded
Place tortilla in warmer and keep warm.
Combine taco seasoning and seasoned salt in a bowl; mix and set aside. Combine cabbage, onions and cilantro (reserving some cilantro for garnish); set aside.
Place frozen fish patty on sheetpan and sprinkle with seasoning. Bake at 350°F for 15-20 minutes until internal temp is 150°. Do not overcook.
After cooking, break up fish, place in tortilla and garnish with remaining cilantro. Offer cabbage mixture in a cup for topping.
