Georgia Pecan-Crusted Wings with Hatoula Peach Sauce

YIELD: 12 WINGS

12 chicken wings, fresh, thawed, washed

1 cup Tabasco pepper sauce

4 cups pecans, coarsely crushed

2 Tbsps. Tabasco habanero sauce

3 cups seasoned flour

3 eggs, whole, beaten

For the peach sauce:

8 oz. heavy peach marmalade, warmed

1 oz. Tabasco pepper sauce

  1. Marinate the wings in 1 cup pepper sauce for 1 hour.

  2. Toss crushed pecans with 2 Tbsps. habanero sauce.

  3. Dip wings into flour, then egg wash, then pecans to coat evenly

  4. Bake in preheated 350°F oven for 15 to 20 minutes or until cooked through.

  5. To prepare peach sauce, mix sauce ingredients.

  6. Serve hot wings with peach sauce.
