Classic Pepperoni Pizza
YIELD: 1 RECTANGULAR PIZZA
1 12" by 3" sheeted dough, slacked in cooler
½ oz. light olive oil
4 oz. red pizza sauce
4 oz. pizza cheese blend (4:1 shredded part-skim mozzarella cheese and shredded Parmesan cheese)
3 oz. pepperoni, sliced thick
Cornmeal, as needed
1. Brush the sheeted dough with olive oil. Spread pizza sauce evenly over the crust. Top with cheese and pepperoni. Place on a lightly oiled pan dusted with cornmeal or on a mesh pizza screen.
2. Bake at 450°F for 6 to 8 minutes or until golden and bubbly. Remove from oven and slice into 3 portions.
