One strategy NU dining has used to strengthen its retail program has been the integration of mini- or full-blown c-store configurations into various dining sites on campus. This has served to increase sales and let the outlets further customize offerings to match specific campus neighborhoods.
On the east side of campus, the Foster-Walker dining complex sees the largest number of foreign and female students. The dining hall features a wide range of vegetarian and vegan options and made-to-order specialties. Meanwhile, the c-store carries a broad selection of organic products and has the largest selection of microwavable and frozen entree choices, a popular option for those who wish to prepare late night food in their rooms.
At 1835 Hinman, a residential dining hall in south campus, another mini c-store located just outside the main servery entrance. It focuses on grab-and-go convenience food and lighter items on display in a chef's case: e.g., freshly-prepared paninis, chicken tenders and salads. The mix appeals to on-the go students who may not want to spend the time to take advantage of the resident hall's all-you-care-to-eat stir fry, pizza, grill and vegan options.
Lisa's Café is situated on the north side of campus where there is a heavy concentration of fraternities and male students in general. A late-night location, its menu features toasted subs, microwavable meals, sushi, pastries, coffee and espresso drinks. Convenience offerings are displayed in an efficient, 125 sq.ft. configuration of modular racks and shelves tucked into a corner of its street-facing seating area. The mix emphasizes the heavier snacks its target population prefers: quarts of milk, bulk packs of soft drinks, beef jerky and salty snacks, etc.
Paws ‘n Go, the largest and highest volume c-store on campus, is located at Norris University Center adjacent to its food court. It appeals to the broadest and most diverse population of commuters, residents, faculty and staff. Paws ‘n Go extends the offerings of the food court and gives students the largest selection of bottled beverages, candy, organic products and grab-and-go salads and sandwiches. It also features an ICEE machine and a selection of ice cream and frozen novelties.
