“The Harvard Schools catering program is geared to more
casual shindigs as opposed to fancier tuxedoed waiter events. There
is emphasis on the food being fresh, tasty and healthy rather than
fancy. Nevertheless, I find it fairly easy to gussy up the platters
of food that we present at these events. We are fortunate to live
in an area where traditional apple or vegetable farmers have seen
the writing on the wall and over the past decade diversified their
crops. What I do then is use some of the unique, fresh and unusual
produce that they have made available to fancy up our catered
meals.”
