Udon Noodles with Sesame and Tofu

YIELD: 4 servings

Vinaigrette:
2 Tbsps. rice or cider vinegar
1 Tbsp. soy sauce
1 Tbsp. dark sesame oil
1/4 tsp. crushed red pepper flakes
1 tsp. garlic, minced 1 tsp. ginger, minced

Pasta:
1 9-oz pkg. fresh Udon (Asian style) noodles
1 8-oz pkg. smoked tofu, teriyaki flavored, cut into 1" pieces
1/2 tsp. salt
1 1/2 cups cucumber, diced
1 cup carrots, shredded
1/2 cup green onions, sliced
2 tsps. toasted sesame seeds

  1. TO PREPARE VINAIGRETTE: Combine vinegar and next five ingredients. Whisk well.
  2. TO PREPARE PASTA: Prepare udon noodles according to package directions, omitting salt. Combine udon noodles and next six ingredients. Drizzle with vinaigrette and toss well. Serve room temperature or chilled.
