Quick Breakfast Muffin Sandwiches

YIELD: 12 servings

12, 12 oz. precooked golden brown sausage patties
6 Tbsps. butter
12 large eggs
12 English muffins, split, toasted
3/4 cup cream cheese
1/4 cup green onions or chives, chopped
Prepared cranberry chutney (optional)

  1. Heat sausage according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium heat. Carefully crack eggs into hot butter in skillet, cover and cook 3 minutes or until eggs are set with soft centers or longer to desired doneness.
  3. To assemble: Spread cut sides of toasted muffins with cream cheese. Add green onions or chives, as desired. Place sausage patties over bottoms of muffins; top with eggs and muffin tops. Serve with cranberry chutney on the side.
