Pear and Cherry Clafouti

Yield: 24 servings

7 oz. dried cherries
1 lb. canned pear slices, drained
9 each eggs
3-3/4 cup milk
1 cup sugar
3/4 cup flour
2 Tbsps. vanilla extract
1 tsp. ground nutmeg
1 tsp. salt Powdered sugar, as needed(optional)
Whipped cream, as needed (optional)

1. Soak cherries in hot water for 10 minutes; drain. Arrange cherries and pears in a single layer in a well-buttered 12"x20"x2" pan; reserve.

2. Beat eggs; beat in milk, sugar, flour, vanilla, nutmeg and salt. Pour mixture over fruit in reserved pan. Bake at 350°F until golden brown and a knife inserted in the center comes out clean.

3. Cool until just warm; cut into 24 pieces, about 3"x 3". (Keep warm in a counter pan or cool and reheat per order.)

4. Top each serving with powdered sugar and a dollop of whipped cream, if desired.
