Peanut Butter Honey Crunch Sandwich

Yield: 12 servings

3 cups peanut butter, preferably natural-style
1 1 /2 cups honey
24 slices buttermilk or potato bread
72 to 96 each potato chips (enough for 6 to 8 chips per sandwich)
6 each bananas, peeled and thinly sliced

  1. Combine peanut butter and honey in a medium bowl; mix until well-combined. Spread equal amounts of mixture onto one side of each bread slice.
  2. Top each half of the bread slices with 6 to 8 potato chips, pressing them lightly into the peanut butter mixture. Top each of the other half of the bread slices evenly with banana slices, pressing them lightly into the peanut butter mixture.
  3. For each sandwich, press together one potato chip-covered slice with one banana-covered slice. Cut in half and serve.
