Luau Sweet Potato Casserole

INGREDIENTS:8 lbs. canned sweet potatoes, mashed 1 qt. crushed pineapple in water 1½ pts. soybean margarine or butter divided 2 Tbsps. salt ½ tsp. black pepper 1 qt. dry bread crumbs 1 cup brown sugar, packed 1 tsp. ground clovesDIRECTIONS:1. Preheat oven to 375°F. In a large bowl, combine the mashed sweet potatoes, pineapple, half the margarine and the salt and pepper. Place into a greased hotel pan. 2. Combine the remaining margarine with the bread crumbs, brown sugar and cloves. Sprinkle this over the sweet potato mixture. Bake for 30 minutes until hot throughout. Serve hot as a side dish.SERVINGS:48, 4 oz. servings
