YIELD: 1 Quart
4 avocados
2 Tbsps. fresh lemon juice
1/2 cup cherry tomatoes, cut in half or quarters if large
2/3 cup hot house cucumber, finely diced seeded (do not peel)
1/2 cup red onion, finely chopped
1/2 cup pitted Kalamata olives, chopped
1/2 cup feta cheese, finely crumbled
2 tsp. fresh oregano, chopped
- Coarsely mash (do not purèe) avocados; stir in lemon juice. Fold in remaining ingredients.
- Serve 1/3 cup with toasted pita bread.
