Yield: 25 Servings
6 lbs. roasted pork, julienned
3 cups carrots, shredded
3 cups red cabbage, shredded
1 lb. cooked soba noodles
25 each wraps
25 each lettuce leaves, chiffonade
FOR THE GINGER SESAME SAUCE:
1 cup olive oil
2 Tbsps. ginger, freshly chopped
1 Tbsp. garlic, freshly chopped
1 tsp. red pepper flakes
2 Tbsps. fresh-squeezed orange juice
1 Tbsp. rice wine vinegar
- Prepare the Ginger Sesame Sauce listed above and chill.
- Prepare the soba noodles, chill and marinate with sauce.
- Place 1 chiffonade lettuce leaf in wrap, and Place 1 /8 cup marinated soba noodles on top of lettuce. Top with 5 strips of pork on top of noodles.
- Add one pinch of shredded carrots and one pinch of red cabbage on top of the pork. Roll wrap, close and serve.
