Delaware North Cos. has published the first in a series of cookbooks titled Pathways to the Plate, featuring recipes from the company’s parks and resorts business. It also includes descriptions of the venues where the chefs who developed the recipes work. The book was supervised by Delaware North Corporate Chef Roland Henin, one of the country’s few certified master chefs. It is available for $50 (hardcover) at www.delawarenorth.com, with all profits going to support Delaware North Cos. Foundation for Humanity.
