Commercial restaurateurs Charles Phan of the Slanted Door and Loretta Keller of Coco500 will run the cafe and restaurant in the newly designed California Academy of Sciences in Golden Gate Park, reports the San Francisco Chronicle. Phan and Keller plan to bring sustainable produce and ecological practices to the museum’s kitchen, which scheduled to open in October 2008. The 200-seat cafe (with another 80 to 100 on the patio) will be open only for lunch and will feature cooked-to-order food stations while plans are still being formulated for the 80-seat full-service restaurant, which will be open for lunch and dinner.
