Baked Halibut with Almonds and Breadcrumbs

YIELD: 20 servings

20 each halibut fillets (5-6 ozs. each)
1/2 cup almonds, toasted and ground in robot coupe
2 cups fresh breadcrumbs
2 Tbsps. mixed fresh herbs (thyme, parsley, rosemary)
as needed salt and pepper
1/2 cup Dijon mustard
2 Tbsps. garlic, roasted and pureed
1 each lemon, juiced
1 Tbsp. soy sauce
1/2 cup melted butter or olive oil

  1. 1. Combine the toasted garlic, soy sauce, mustard and lemon juice. Brush the mixture on top of the fish.
  2. 2. Combine breadcrumbs, ground almonds, herbs, salt and pepper. Put a generous amount of breading on the mustard-brushed side of the fish. Drizzle with olive oil or melted butter.
  3. 3. Bake in 375°F oven until internal temperature reaches 140°F. Garnish with Italian parsley sprigs and chopped parsley on fish.
