YIELD: 20 servings
20 each halibut fillets (5-6 ozs. each)
1/2 cup almonds, toasted and ground in robot coupe
2 cups fresh breadcrumbs
2 Tbsps. mixed fresh herbs (thyme, parsley, rosemary)
as needed salt and pepper
1/2 cup Dijon mustard
2 Tbsps. garlic, roasted and pureed
1 each lemon, juiced
1 Tbsp. soy sauce
1/2 cup melted butter or olive oil
- 1. Combine the toasted garlic, soy sauce, mustard and lemon juice. Brush the mixture on top of the fish.
- 2. Combine breadcrumbs, ground almonds, herbs, salt and pepper. Put a generous amount of breading on the mustard-brushed side of the fish. Drizzle with olive oil or melted butter.
- 3. Bake in 375°F oven until internal temperature reaches 140°F. Garnish with Italian parsley sprigs and chopped parsley on fish.
